Homemade Marshmallows:  Why It Is the Better Choice

Marshmallows – those fluffy, pillowy treats that make their way into our lives at just the right moment. Whether nestled inside a hot cup of cocoa on a cold winter’s day, toasted over a campfire, or squished between layers of graham crackers and chocolate for a gooey s’more, marshmallows have become synonymous with comfort, indulgence, and wintery thoughts–or summer campfires!

But as much as we love them, have you ever wondered what makes marshmallows so irresistible, or why homemade versions often outshine the store-bought kind? In this blog post, we’ll explore the times when we crave marshmallows, the science behind their allure, and why crafting them from scratch can elevate the experience to a whole new level.

When Do We Reach for Marshmallows?

  1. Cold Weather Comfort—When temperatures dip and the chill sets in, there’s nothing like a steaming cup of hot chocolate topped with a fluffy marshmallow (or two or three like my boys insist on!). The contrast of warm, creamy cocoa and the pillowy sweetness of a marshmallow is a comforting, nostalgic pairing. The sugar dissolves quickly, making the drink feel even more indulgent and creamy.
  2. Campfire Treats—Campfires are another quintessential marshmallow moment. Whether you’re out camping or just enjoying an evening in the backyard, the ritual of roasting marshmallows over an open flame is pure magic and such a treat for my kids. There’s something mesmerizing about watching the marshmallow slowly turn golden brown (or, if you’re like some, perfectly charred) as you turn it over the flames. This process is as much about the experience as it is about the taste, and no s’more is complete without that soft, gooey center.
  3. Baking & Desserts—Marshmallows also find their way into a range of sweet treats. From rice krispie treats to fluffernutter sandwiches (peanut butter and marshmallow fluff, anyone?), marshmallows bring a unique texture and sweetness that adds fun and flavor to desserts. They can even be used to fill cakes, pies, and cookies, lending that special lightness and melt-in-your-mouth quality that is hard to replicate with other ingredients.
  4. Special Occasions—Marshmallows make their appearance at many celebrations, too. Who doesn’t love a marshmallow centerpiece at a birthday party, or the marshmallow-themed goodies served at festive holiday gatherings? Their soft, bouncy texture and sugary sweetness make them perfect for moments of joy and indulgence.

Why Are We Drawn to Marshmallows?

At their core, marshmallows appeal to our senses in a few key ways:

  • Texture: That fluffy, pillowy, light-as-air consistency is incredibly satisfying. It’s the balance between softness and slight chewiness that gives marshmallows their addictive quality. The way they dissolve on your tongue brings an almost ethereal sensation that other sweets can’t quite replicate.

While store-bought marshmallows have their place (hello, convenience, I get it!), there are several reasons why using a homemade marshmallow recipe at home can elevate your treat game. Here’s why:

  • Better Flavor and Quality Ingredients—Homemade marshmallows give you full control over the ingredients, which means no artificial flavors, colors, or preservatives. Store-bought marshmallows often contain ingredients like corn syrup, sugar syrup, artificial colors, and stabilizers to help them maintain their shelf life. By making them at home, you can use pure vanilla extract, high-quality gelatin mixture, and even organic sugar or maple sugar for a cleaner, more natural taste.
  • Customization—One of the most fun aspects of making marshmallows at home is the opportunity to customize them. You can infuse them with flavors like mint, cinnamon, or coconut, or roll them in powdered sugar, cocoa powder, chocolate chips or crushed nuts for extra texture. You can even make them in different colors (natural dyes of course!) or add swirls of food coloring for an extra festive touch. The possibilities are endless really–and really for any occasion. 
  • Texture Perfection—Homemade marshmallows have a lighter, fluffier texture than most store-bought varieties, which can sometimes feel dense or overly chewy. When you make them yourself, you can perfect the consistency to suit your personal taste, achieving the perfect balance of airiness and chewiness. Plus, they tend to stay fresher longer, especially when made in small batches. 
  • The Joy of Crafting—There’s something deeply satisfying about making marshmallows from scratch. Watching a simple mixture of maple syrup, gelatin, and water transform into something so light and airy is a delight. My boys love to get in on the process too!  The process is also a great way to get creative in the kitchen and share the experience with family or friends. Homemade marshmallows can also make for thoughtful, homemade gifts, especially when you package them in cute boxes or bags with personalized labels.
  • No Artificial Aftertaste—Many store-bought marshmallows have a subtle artificial aftertaste that comes from the preservatives or flavor enhancers they contain. Homemade marshmallows, however, are pure and simple, offering a clean, delightful flavor that is hard to beat.

How to Make Homemade Marshmallows

If you’re ready to give homemade marshmallows a try, here’s my simple recipe to get you started!

Basic Ingredients:

  • Gelatin–this ingredient is a easy find at your local grocery store!  It is usually found in the baking aisle near the pudding and jello mixtures.
  • Water–You’ll use this to create bloomed gelatin, the process of hydrating gelatin.
  • Maple Syrup–Using maple syrup is my favorite way to sweeten the sugar mixture.  It’s a more natural and healthier way over using brown sugar or granulated sugar. 
  • Vanilla–I have always used pure vanilla liquid for a natural flavor, but you can always try vanilla bean paste if you have that on hand.
  • Arrowroot Powder–I love being able to use arrowroot powder in this recipe.  It keeps the marshmallows from sticking.

Do you notice that my recipes doesn’t contain vegetable oil, confectioners’ sugar, high fructose corn syrup, or a cornstarch mixture?  My goal in creating this recipe was to make sure I am using good, healthier ingredients, while still making gourmet marshmallows!  All you really need is a baking dish, mixer, simple ingredients, and your choice of marshmallow flavors!  I hope you enjoy!

Recipe

Ingredients

  • 6 Tablespoons gelatin
  • 2 cup water
  • 1 cup maple syrup
  • 2 tsp vanilla
  • 1 1/2 tsp arrowroot powder

Instructions

  1. Prep a cookie sheet with a piece of parchment paper.
  2. Evenly sprinkle 1 tsp arrowroot powder over top.
    In the bowl of a stand mixer, pour 6 Tablespoons gelatin over 1
    cup of the water.
    (This is called blooming=hydrating gelatin.)
  3. In a saucepan, combine 1 cup remaining water, 1 cup
    maple syrup and 2 tsp vanilla.
  4. Stirring frequently, bring to a boil for about 7 minutes. If
    you have a thermometer the temp you want to reach is
    240 degrees Fahrenheit.
  5. With your mixer on low, slowly pour your boiling liquid
    into your mixing bowl containing the gelatin mixture and a whisk attachment.
  6. Gradually increase speed too high.
  7. Continue to mix until gentle peaks form. Be careful not
    to overmix.
  8. Quickly spread mixture evenly over a prepared pan or cookie sheet
    with a greased spatula.
  9. Optional, add sprinkles to top of the marshmallow. This is a fun way to add to these homemade vanilla marshmallows!  
  10. Sprinkle remaining arrowroot powder over top.
  11. For best results let sit for about 10 minutes before cutting your first batch.  
  12. Store in an airtight container and store in a dry place. I have found this is the best way to store them!  You can also use parchment paper in between layers.
